In an effort to create authentic Irish dishes, Chef Shayne discovered The British Butcher Shoppe, Ltd. in North Vancouver. Owner, Gerry Davenport, gave Chef Shayne a tour of his shop when Shayne stopped by to pick up Irish bacon for his Irish Potato Boxty's and Gammon ham for the Jameson Irish Whisky Chicken. All the bacon and ham is cured on the premises from original recipes that have been handed down from generation to generation. Some of the recipes date back to the early 1600; and several are from the 1700 and 1800's.
